Weekend Baking

Just a quick one as the weather has turned a bit icky here in the UK.  As I've mentioned I am a big fan of baking and only seem to have time to do some at the weekend.  I have been baking for years, my earliest memories are making fairy cakes with my mum but I have only recently treated myself to some things that make it a whole lot easier.  Firstly, and this is an obvious one, I've bought some really good quality digital scales.  The vintage looking scale ones are very pretty to look at in the kitchen but not very accurate so my new fangled ones are making a whole world of difference.  Next I have bought some little measuring spoons, bright coloured and help me out with measuring fractions of a teaspoon, tablespoon and the Amercian 'cup'.  Lastly but by now means least is my apron.  I have made these for friends and family for a while but never thought to have one myself so I treated myself, here are some photos.


Again, it seems obvious but an apron is great, I make a huge mess in the kitchen and this at least saves my clothes an unnecessary wash.

So why the baking inspired post?  Well, me and the mister have  just made some hot cross buns.  Very apt with Easter coming up but we seem to make them a lot.  We use the Nigella recipe.  I do the prep work and Mr P helps with the kneading which makes a lovely soft dough and, therefore, lovely soft buns.  Here's the recipe,they look a little rougher than the pretty shop bought ones but are very satisfying to make and so tasty.


Ingredients
 
FOR THE DOUGH:
  • 150ml milk
  • 50g butter
  • Zest of 1 orange
  • 1 clove 2 cardamom pods
  • 400g bread flour
  • 1 packet easy-blend yeast (7g)
  • 125g mixed dried fruit
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • 1 egg
FOR EGG WASH:
  • 1 egg, beaten with a little milk
FOR THE CROSS ON THE BUNS:
  • 3 tablespoons plain flour
  • ½ tablespoon caster sugar
  • 2 tablespoons water
FOR THE SUGAR GLAZE:
  • 1 tablespoon caster sugar
  • 1 tablespoon boiling water

Method

  1. Heat the milk, butter, orange zest, clove and cardamom pods in a saucepan until the butter melts, then leave to infuse. I have gone rather cardamom mad recently, but this short aromatic infusion gives a heavenly scent to the little fruited buns later.
  2. Measure the flour, yeast and dried fruit into a bowl and add the spices. When the infused milk has reached blood temperature take out the clove and cardamom pods, and beat in the egg. Pour this liquid into the bowl of dry ingredients.
  3. Knead the bowl either by hand or with a machine with a dough hook; if it is too dry add a little more warm milk or water. Keep kneading until you have silky, elastic dough, but bear in mind that the dried fruit will stop this from being exactly satin smooth.
  4. Form into a ball and place in a buttered bowl covered with clingfilm, and leave to prove overnight in the fridge.
  5. Preheat the oven to gas mark 7/220C. Take the dough out of the fridge and let it come to room temperature.
  6. Punch the dough down, and knead it again until it is smooth and elastic. Divide into 16 balls and shape into smooth round buns. I wouldn't start worrying unduly about their size: just halve the dough, and keep halving it until it's in eight pieces, and use that piece to make two buns. Or just keep the dough as it is, and pinch off pieces slightly larger than a ping pong ball and hope you end up with 16 or thereabouts. Not that it matters.
  7. Sit the buns on a baking parchment or Bake-O-Glide-lined baking sheet. Make sure they are quite snug together but not touching. Using the back of an ordinary eating knife, score the tops of the buns with the imprint of a cross. Cover with a teatowel and leave to prove again for about 45 minutes - they should have risen and almost joined up.
  8. Brush the buns with an egg wash, and then mix the flour, sugar and water into a smooth, thick paste. Using a teaspoon, dribble two lines over the buns in the indent of the cross, and then bake in the oven for 15-20 minutes.
  9. When the hot cross buns come out of the oven, mix the sugar and boiling water together for the glaze, and brush each hot bun to make them sweet and shiny.
Serves: Makes 16

This week I mainly been using...

To coin a phrase (not sure if anyone remembers The Fast Show)  but 'this week I have mainly been....' loving Benefit cosmetics.  I went into the Covent Garden branch recently and the ladies in there were just lovely.  I have to admit that what drew me into my first Benefit store was the way it looked and the cute vintage packaging.  They are more than just pretty bags and boxes though and do an incredible range of products and colours.
I walked away with a bag of goodies which included their new face products - the b.right Radiant skincare range. I had a little try in the shop and have been using it for a week now and can see a huge difference.  It looks like my skin is glowing in the morning and that lasts all day.  Again, I admit the packaging is very cute and a little 1950s but I would definitely recommend it.


I am a huge fan of light pink 1950s makeup and I now own 2 makeup musts to achieve this.  Firstly is a shimmer lipstick called 'Pinking on You' and second is the gorgeous smelling 'Bella Bamba' which is so easy to apply and smells like  watermelon.


This little shopping spree links nicely into this next bit.  One of the things I am desperately looking forward to this summer is 'Coquette' at Kettner's.  The first one took place last Saturday.

Coquette... an afternoon dedicated to spoiling treats and indulgent glamour just for girls. This is being held at the very decadent Kettner's in Soho (home to Oscar Wilde's legendary panther feasts, and the scene of many of Edward VII's dalliances, including Miss Lily Langtry). Intimate dance classes, the Shellac Sisters, makeovers with vintage specialists, Lipstick and Curls, Benefit Cosmetics, and Murad, a dating clinic, kissing classes, a dressing up room, some fabulous fashion designers, including Katherine Elizabeth, who makes hats for Dita von Teese, champagne, cocktails... the list goes on and on! This is really the place to be, and will be even better than the hugely popular Tart that Mr Carter hosted last year

Tickets have now completely sold out for the June date but I there are some others in the pipeline and more to come as I am sure this is going to become hugely successful for the wonderful Mr David Carter.

Mid-month pick me ups

Oh yay, the sun is out.  How lovely!  So so pleased as I have finally dressed correctly for the weather.

I wrote this post a while ago but forgot to upload it so here it comes.

I like to have little pick me ups up my sleeve for when it gets to the middle of the month and I’m no closer to pay day!  I normally end up buying a new nail varnish or lippy but thought that I needed to share this little mid-month treat with you.  Nearly everyone I know has either an iphone of some type or a blackberry so for all those smart phone users out there, get on to www.mobstar-cases.com  They do lovely cases to brighten up your phone and make it a little more unique.   An extra touch is that some of them come with free wallpapers that match the cover you’ve chosen. Shoes, bags and cakes - oh my!

As I have said before I love Miss L Fire shoes and now I can frankly say I love Miss L Fire.  My beautiful, wonderful, shining new shoes arrived the very next day after I ordered them online and direct.  Luck was on my side in spades, as when our lovely Mr Posty knocked on the door with the shoes, Mr P was out so he doesn't know I have added to my 'collection' mwahahahahah!  That means I have a higher chance of getting away with having them for a while before he notices them and I can use my trusty line of 'wow, these old things, no, I've had them for ages and frankly I'm amazed you've only just noticed them'.  Hehe I am evil and tricksy.  Having said that though these shoes are amazing and I'd be surprised if he doesn't comment on them.  The craved wooden heel is amazing and truly a work of art.
I'll take a photo of them in situ when I get the chance.

Then, as even more luck would have it, the gorgeous Lucite bags by the same wonderful shoe maker, were for sale online by What Katie Did on pay day.  These were only available at the WKD boutique in Portobello Road originally so hurrah!  I went online and was all ready to order the tortoiseshell bag until I saw they did it in pillar box red.  Pillar box red! (swoon)  After I had picked myself up from the floor I ordered the red one sharpish.  When it arrives (which I think it has but just been taken to the sorting office) I will take a photo of it in its swoon-worthy glory.  For now here is the stock photo.


Lastly, I had a 'Stepford' weekend this weekend and loved it.  Saturday I bought loads of lovely Spring flowers and arranged them so that we now have 5 vases full of double-headed daffodils, hyacinths, tulips, and anemones.  I did some sewing, knitting and fixed the other half's trousers.  Sunday, I was in the kitchen baking and cutting crusts off sandwiches, wearing my pinny and making a mess.  Whenever I'm in the kitchen it looks like monkeys have come in and thrown stuff around, just me though....I made 2 lots of cupcakes, mocha sponge with coffee icing as mumsy's favourite and, from the Primrose Bakery book - their Strawberry and Cream cupcakes.  These were so good and look very sweet and summery.  I laid the table the night before Mothers' Day and Mr P said it looked like the Mad Hatter's Tea Party.  He couldn't have given me a nicer compliment.  I love my cake stand in the photo below, it's the same one that they use at Bea's of Bloomsbury.  I'm actually going there to see my friend next week so that's good news.  I love afternoon tea, be great to have it everyday but don't think my waist line will thank me!  Happy Monday all.
